    Easy Lemony Beets

    No Oils Added

    Naturally sweet beets combine nicely with tangy lemon in this simple recipe for Easy Lemony Beets.  In his book The Whole Heart Solution, Dr. Joel Kahn (2013) explains that beets contain a lot of betaine, a “natural ingredient that spins the homocysteine cycle faster and promotes lower blood pressure and total body health”  (p. 96).     Ingredients
    • 3whole beets
    • 10cups water
    • 1tablespoon lemon juice
    • 2 teaspoon lemon zest

    Instructions
    1. Trim ends and leaves off beets, leaving about an inch of stems sticking out of the top (I use these as little handles).
    2. Rinse beets.
    3. Place beets in large pot and cover with water.
    4. Boil gently for 45 - 60 minutes. Check occasionally and add more water as necessary to keep beets covered. They are ready when a fork will pierce them easily.
    5. Remove beets from water and let them cool enough that you can handle them comfortably. (Beets stain, so I like to place them on a ceramic plate that washes up easily).
    6. Use a knife and fork or your hands to peel the beets. The skin will slip off easily. (If you use bare hands your skin will be stained for the rest of the day, so you might want to use gloves).
    7. Cut up beets and toss with lemon juice.
    8. Season with lemon zest and enjoy.
