    Tofu Scramble

    This Tofu Scramble will fill you up! You can prepare it with Marc’s Tofu Scramble Spice Mix. Click here for the recipe. Our spice mix has some kick to it. The cayenne pepper makes it spicy, so if spice isn’t your thing, feel free to omit it.

    We prefer to use firm tofu for our scrambles. The kind you find in the refrigerated section of your grocery store works best. Just be sure to drain it before adding it to your pan.

    When you break up the tofu the texture resembles scrambled eggs. And when you add the spice mix, the spices give the tofu a beautiful yellow color which also makes it look like eggs. In fact, we like our Tofu Scramble even more than scrambled eggs! The spices create a delicious flavor and they’re full of antioxidants. Trying to avoid cholesterol? Here’s some good news: unlike eggs, tofu has no cholesterol, so no worries.

    Whether we have Tofu Scramble for breakfast, lunch, or dinner, Marc always makes tacos. Here’s a picture of his latest plateful of tacos. Yum, right? They’re packed with flavor.

    Tofu Scramble makes a great dinner too! Try serving it with oven fries or Spanish Rice.  Tofu Scramble sandwiches also taste great–simply toast bread, spread some ketchup on each slice, and fill with your scramble. It’s a classic!

    Ingredients
    • 8 oz. package firm or extra firm tofu
    • 2tablespoons Tofu Scramble Spice Mix
    • 2-5tablespoons nondairy milk or water
    • salt and pepperto taste (optional)

    Instructions
    1. Drain the tofu.
    2. Add tofu to pan. Using a large spoon or spatula, break up the tofu until it resembles scrambled eggs.
    3. Cook over medium high heat for 3 minutes, stirring frequently.
    4. Mix in 2 tablespoons of spice mix and 2 tablespoons of plant milk or water. If spices do not blend well, add more plant milk or water a spoonful at a time.
    5. Continue cooking over medium heat, stirring frequently. If mixture sticks, add more plant milk or water, a spoonful at a time. It is done when enough moisture cooks away that it becomes a consistency you like. This will take 3-5 minutes.
    Recipe Notes

    Try adding veggies to your Tofu Scramble. For instance, before adding tofu and spice mix to the pan, first saute veggies in water. When the vegetables just begin to soften, put the tofu and spices in the pan. Here are some veg ideas: chopped onion, bell pepper, zucchini, or sliced mushrooms. About 1 cup of chopped vegetables works great!
