Hearty Lentil Soup
Our Hearty Lentil Soup has a secret ingredient that makes it extra tasty– Worcestershire Sauce. (We use Annie’s Naturals brand because it is organic and vegan). The rich, umami flavors in this sauce and the texture of the lentils make it flavorful and filling. Our friends and family love it! Serve it up with bread and salad and you have yourself a satisfying and delicious meal.

A hearty, flavorful soup that satisfies all types of eaters. We love to serve it with bread, rolls, or biscuits for dipping. If you are serving this to kids this helps a lot because kids love to dip! Even big kids.

- 1/2cup waterto saute veggies
- 1small onion diced small
- 1carrot diced small
- 1stalk celery diced small
- 4cloves garlic chopped
- 4cups vegetable broth
- 1 1/4cup brown or green lentils, rinsed
- 115 oz. can diced tomatoes
- 2 bay leaves
- 1/4teaspoon ground sage
- 1/4 teaspoon dried thyme
- 1teaspoon white wine vinegarany vinegar or lemon juice will do
- 1 tablespoon worcestershire sauceAnnie's Naturals brand is vegan
- 1 tablespoon real maple syrupif desired
- 1 cup baby spinach
- saltto taste
- ground black pepperto taste
- Over medium heat, saute the diced onion, carrot, and celery in a large pot using water added a tablespoon at a time to prevent sticking. Cook until these veggies are soft and the onions translucent. This will take about 7 minutes.
- Add the chopped garlic to the pot and cook for 1 more minute, adding another tablespoon of water to prevent sticking, if needed.
- Pour in the vegetable broth, lentils, can of tomatoes (including juice), bay leaves, sage, and thyme. Stir.
- Cover and cook over medium high heat until the soup starts to simmer. This will take about 10 minutes.
- Reduce heat to low and simmer for 15-20 minutes until the lentils are soft.
- Add the white wine vinegar, Worcestershire sauce, maple syrup and spinach.
- Allow the spinach to wilt.
- Taste test and adjust seasonings as needed. Add salt and pepper if desired and serve.
