Banana Butter

Food, No Oils Added

Our vegan banana “butter” is creamy, naturally sweet, and healthy.  No cholesterol here and no added oils or fat! You can spread it on toast, pancakes, muffins, or waffles, as we did this morning when we took this picture. It is so simple, I almost feel funny calling this a recipe. For a quick, plant based breakfast, I pop frozen waffles into the toaster and while they warm up I mix up my banana butter.

Ingredients
  • 1/2 ripe banana
  • 2drops vanilla extract
  • dash cinnamon

Instructions
  1. In a small bowl, smash 1/2 banana with a fork until creamy.
  2. Add a couple drops of vanilla extract and a dash of cinnamon.
  3. Mix well.
  4. Spread on toast, waffles, French toast, pancakes, etc.

    starting tomorrow!! what to shop at the store? where to find vegie lunchmeat? what is in benocol spread? what is the best lunchmeat? where to find rabble roaster?where to buy larger cans of chic peas?

      We are so happy for you! At the store you might want to get a few convenience foods (such as veggie burgers, soups and frozen vegan meals- Amy’s and Kashi brands are good-but watch fat content) as well as some items that take longer to prepare that you already like (such as pasta with grilled veggies and marinara sauce or the ingredients for chili and corn bread). Better Health, Whole Foods, and Meijer have veggie lunch meat. Our favorite type is Smoked Tomato made by Field Roast which is sold at Whole Foods. Marc likes many of the brands available, but Kim is not crazy about them. If you jazz them up with tasty mustard, lettuce, and tomato they taste decent. Kim prefers hummus sandwiches with sliced fresh mushrooms, cucumbers, tomatoes, and alfalfa sprouts.
      We avoid using margarine type spreads such as Benecol, so we don’t know much about them. Most of them have trans fats or partially hydrogenated oils, which are not healthy.
      You can buy Rabble Roasters through Door to Door Organics, a produce delivery service. If you would like to sign up with them, let us know and we can get you a coupon for $15.00 off your first order. You can also buy Rabble Roasters online at buroaksfarm.com.
      We have not seen large cans of chickpeas for sale in a store anywhere, but Eden Foods sells 108 oz. cans online. If you find them in a store, please let us know. If you are not used to eating legumes, and you are concerned about them being hard to digest, try Eden Foods brand which is also sold at Better Health Market. This company adds a little bit of Kombu seaweed to their canned beans. You can’t taste the seaweed, but it makes them easier to digest. After a while we found that our bodies changed and digesting beans is not a problem anymore.
