BYOB Build Your Own Bowl

Use our handy template to BYOB–Build Your Own Bowl!

Our favorite combination–black beans, sweet potatoes, quinoa, corn, sautéed onions and bell pepper. We love to top it off with sliced, fresh jalapeños, avocado, guacamole, and a squirt of lime.

When using canned beans, remember to drain the beans and rinse them well. This makes them easier to digest!

Be sure to load up on toppings. They’re the icing on the cake!

Ingredients
Black Beans
  • 115 oz can black beans
  • 1/4teaspoon ground cumin
  • 1/4teaspoon ground coriander
  • 1/4teaspoon garlic powder
  • salt and pepperto taste
Quinoa
  • 3/4cup quinoaWe use Ancient Harvest brand because it is rinsed.
  • 1 and 1/2cups water or veggie broth
Baked Sweet Potatoes
  • 3 sweet potatoes
Sauteed Onion and Bell Pepper
  • 1large yellow onion
  • 1large bell pepper (any color)
  • 1/2 cup water or veggie broth
  • salt and pepperto taste
Guacamole
  • 1 ripe avocado
  • 1tablespoon lemon juice
  • 1/4 teaspoon hot sauceWe prefer Louisiana Hot Sauce.

Instructions
Black Beans
  1. Drain and rinse a can of black beans. Add beans, 1/4 cup of water and spices to pot and stir. Cover and cook over medium heat until hot, stirring occasionally.
Quinoa
  1. In a medium pot bring 3/4 cup quinoa and 1 and 1/2 cups water or vegetable broth to boil. Lower heat to simmer and cover. Cook about 12-15 minutes until water is absorbed.
Mashed Sweet Potatoes
  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Pierce top of sweet potatoes with fork and place on lined baking sheet with holes facing up. Cook for 45 - 60 minutes until tender. Remove peels if desired and mash with potato masher or large fork.
Sauteed Onion and Bell Pepper
  1. Cut onion and bell pepper into thin strips. Put in pan and sprinkle with salt and pepper to taste. Cook over medium to medium high heat until slightly browned, stirring occasionally. Keep an eye on these veggies -- You'll need to add water or vegetable broth a spoonful at a time to prevent burning and sticking.
Guacamole
  1. Mash avocado with a potato masher or large fork. Mix in lemon juice, hot sauce, and salt. Taste test and add more hot sauce and salt if needed.
