Sweet Potato with Black Bean Chili

A sweet potato with black bean chili is one of Marc’s favorite meals.  It is hearty and keeps him filled up for, well, a little longer than usual. (He eats often!)  We bake about four sweet potatoes at a time and keep them in the refrigerator for quick, easy meals or snacks. To make a delicious lunch or dinner, we reheat them in the microwave. Then we pour black bean chili on top.  If you are feeling ambitious, you can make your own black bean chili, or try a pre-made variety.  We like Amy’s brand Low Fat Black Bean Chili (it is gluten free):IMG_4152

To finish off this dish we like to add sliced green onions, diced sweet onions, or cilantro.  Marc also like to add some hot sauce to the top to kick up the spice!

Ingredients
  • 4 sweet potatoes
  • 1can Amy's Low Fat Medium Black Bean Chili
  • 1/2 cup sliced green onionsor cilantro or diced onion for topping (optional)
  • hot sauceif desired

Instructions
Bake the sweet potatoes in conventional oven
  1. Scrub the potatoes and rinse them. Poke each with a fork a couple times.
  2. Place the potatoes on top oven rack, and place a pan underneath on lower rack to catch any drippings.
  3. Turn on the oven to 425 degrees and bake until soft. Medium sized potatoes will take about 45 minutes. Smaller potatoes will take less time and large potatoes will take one hour to an hour and fifteen minutes.
Add the chili and toppings
  1. In a medium sized saucepan, heat the chili until warm.
  2. Slice open the top of the baked sweet potatoes and add about 1/2 cup of chili to each.
  3. If desired, sprinkle on your favorite toppings such as sliced green onions, cilantro, diced onions, or hot sauce.
Recipe Notes

You can also bake sweet potatoes in the microwave! To do so, wash a sweet potato, poke it a couple times with a fork, and microwave on high for 8-10 minutes until soft.
